These cookies were my Grandpa Luebke's favorite. He passed away one year ago this coming Sunday. Since I have been thinking about him I thought I would post these.
1/2 C. Canola oil
1 C. sugar
1 egg
3 T. molasses
2 C. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 C. granulated sugar for dipping
Mix oil and sugar thoroughly. Add egg and beat well. Stir in molasses. Sift dry ingredients together and then add. Drop teaspoonfuls of dough into sugar and form balls coated with sugar.
Place on ungreased cookie sheet 3 inches apart. Bake for 12 minutes at 350˚. Makes 5 dozen. Cookies will flatten and crinkle.
