Fruit Leather

I know these look yucky- I threw a handful of BLUEBERRIES into this batch.

18 apricots
1/2 C. applesauce
3 Tbs. honey

Puree in blender or food processor. Pour 1/4" deep onto flat dehydrator trays. Dry- over night if possible. Cut into quarters (if you have a circular dehydrator) and roll up in plastic wrap. Recipe can be used for other fruit (peaches, strawberries, kiwi, pineapple, etc). I added a couple of tablespoons of lemon juice to help keep the color bright- I'm not sure if it helped or not.

Bacon Spinach Avacado Wraps

I made these for dinner on a very hot day. It was nice to have something cool for a change. The leftovers are perfect for lunches.

Tortillas (whole wheat if available)
cooked turkey bacon
fresh spinach
slice avacado
Cream Cheese (softened)
green onions chopped

mix 4 oz. cream cheese with green onions and spread on tortilla. Layer spinach, bacon & avacado. Roll up and hold together with a toothpick. Serve with a green salad and watermelon.

Waffles

4 egg whites
2 C. buttermilk
2 C. Whole Wheat flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/4 C. canola oil

Heat waffle iron. Beat egg whites until they form stiff peaks. Mix in remaining ingredients until smooth.
Pour batter from cup or pitcher onto center of the hot waffle iron. Bake about 5 minutes or until steaming stops. Remove waffle carefully.
Yield: about 8 seven-inch waffles.
We like to serve them with peanut butter and syrup.

Calzones

This was just an experiment so I'm not sure if there is a better way to make these. I would love to have an actual recipe- but these turned out really well.

Make one half recipe of Never Fail Rolls. Use whole wheat flour for half of the flour. After dough has risen once or twice divide dough into 8 parts. Roll each ball into a 6" circle. Fill with 1/3 C. filling and add plenty of mozzarella cheese. Seal the edges and then press edge down with a fork. Bake at 400˚ for 12-15 min. I used some of the dough to make a little cheese pizza since the kids eat that better.

Filling:
Pizza Sauce (I used leftover spaghetti sauce)
sausage, pepperoni, bell peppers, olives, onions (you pick!)
Mozzarella cheese

Fried Chicken

This recipe is from Xela Lanier. Her boys love this recipe so I tried it out. I split the recipe for our family. Yum! Thanks Xela!

4 c. flour (divided)
2 T. garlic salt
1T. paprika
3 t. pepper (divided)
2 1/2 t. poultry seasoning
2 eggs
1 1/2 c. water
1 t. salt

3 lb. bag of boneless skinless chicken breasts or tenderloins.

Mix together 2 2/3 c. flour, garlic salt, paprika, 2 t. pepper and poultry seasoning and set aside.
In shallow bowl mix together eggs, water, salt, 1 t. pepper and remaining flour (1 1/3 c.).
Dip chicken in egg mixture then in flour mixture, coat well, then fry - usually 10 minutes on each side.

Mrs. Dash's Potatoes

These potatoes were brought to us when Laurie was born. They are delicious. I made a similar version but instead of using a cube of butter I drizzled olive oil over the potatoes. They probably aren't as good that way- but I think they still tasted great.

Potatoes (red potatoes if you have them) sliced in eighths (wash but do not peel)

1 cube butter
Mrs. Dash's Grilling Blends- Mesquite (any flavor is good)
Seasoning salt
pepper
Parmesan Cheese
Melt butter in baking dish. Slice potatoes and place in pan. Sprinkle with Mrs. Dash, seasoning salt and pepper to taste. Sprinkle parmesan cheese over top and bake for 1 hour or until potatoes are tender.
